Ingredients
- 6 boneless pork chops (total 1.5 kg), by Maillard
- 2 tablespoons salt
- 2 cups warm water
- A handful of fresh oregano, coarsely chopped
- Ground pepper
- Olive oil for cooking
Breading
- 1/2 cup bread crumbs
- 1/3 cup grated Parmesan cheese
- 2 tablespoons Italian spices
- 1 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- Ground pepper
Preparation
- Preheat the oven to 400°F. Cover a baking sheet with parchment paper.
- Place the pork chops in a large, airtight dish. Set aside.
- Dilute the salt in warm water and pour over the pork. Add the fresh oregano and pepper to taste. Cover with cold water. Mix, close the dish and reserve in the fridge for 1 hour.
- In a bowl, add the breadcrumbs, Parmesan and spices then season to taste. Toss well and set aside.
- Remove pork chops from brine and drain. Throw in the breading mixture and cover generously on all sides, pressing lightly.
- In a large non-stick skillet over medium heat, add a drizzle of olive oil and add the pork chops. Cook 3 to 4 minutes, or until golden brown, then flip. Continue cooking for 1 minute and place on the baking sheet.
- Place in the oven and cook for about 15 minutes or until the internal temperature reaches 145°F. Serve immediately.
